Pecan Pie Bites
Makes about 12 dozen
12 Medjool Dates - pitted and roughly cut
About 3 cups candied Pecans*
Pure organic maple syrup
*Candied Pecans: preheat oven to 350f. Place raw pecan halves or pieces on a lightly oiled baking sheet. Drizzle with about 2 T pure maple syrup. Sprinkle with ground cinnamon. Mix well and spread in a single layer. Bake for about 10-15 minutes. Let cool completely.
Put dates and 2 1/2 cups pecans in a food processor. Pulse until well combined. Roll into balls.
Pulse the remaining 1/2 cups of pecans in the food processor and roll the balls in the gourd pecans. Store in the fridge for a few weeks.
